I believe it's so rare cause you only get one or two per cow. Years ago, since it was so rare, butchers would take those cuts home. This made them even rarerere. I seenem' at Golden Gate Meat Co. at the Ferry building. And they're so rich and yummy cause of where they come from on the cow. I believe they live next to some organ, like the liver or kidneys er somethin'.
